Vanilla

In commercial production of perfumes and aromas, Vanilla is one of the most widely used ingredients. It is a highly expensive spice, Vanillaprobably the most expensive one after saffron, and its pleasant floral aroma finds wide applications. It is also one of the most common form of flavoring food items, which is used in ice creams, chocolates, cakes, pastries, custards, biscuits, confectioneries and soft drinks etc.

It is originated in Mexico, Hernán Cortés introduced it to Europe for the first time in 1520s. It is derived from the orchids of the genus Vanilla, which was exclusively cultivated in Mexico till 1837. Oustside Mexico, the plant couldn't be cultivated cause of pollination problem. In 1837, Belgian botanist Charles François Antoine Morren solved the problem by discovering artificial means to pollinate the plant. But the discovered method was not commercial possible so it is no more in use today. Fortunately in 1841 a 12 year old boy discovered that the plant can be hand pollinated

There are various species of Vanilla like V. fragrans, V. tahitensis, V. pompona. They are cultivated in cultivated in Madagascar, Réunion and other tropical areas along the Indian Ocean. V. tahitensis is grown in South Pacific and V. pompona. in the West Indies, Central and South America. But many vanilla scented products don't contain the actual vanilla extract as it is very expensive and rare. Now a days, commercially, Vanillin is used to produce the same scent, it is the synthetic form of Vanilla.
